Quick Veg Recipes to Take to the Office
There’s so many diets to choose from, it’s hard to keep track anymore! Who’s to know what’s the right way to eat? No grains? Low carb? No meat? Mainly meat? It’s all so confusing and conflicting! Nevertheless, the one thing all diets seem to have in common is that vegetables are good. So, I figured my best bet to eating healthy at the office would be to eat more vegetables throughout the day. They’re nutrient dense, they fill you up with relatively little calories, they keep you energized and keep your body’s…um…indoor plumbing…functioning properly. There’s only one problem… Vegetables don’t taste very good. So to help, I’ve assembled a few quick recipes that make vegetables not taste quite like vegetables.
Carrot Fries
These taste pretty awesome! It’s seriously just sliced carrots brushed with olive oil. Make sure to sprinkle with a little salt, pepper and parsley before baking in the oven.
Mashed Cauliflower
Instead of mashed potatoes, how about a side of mashed cauliflower? The texture, color, and taste of mashed cauliflower is pretty close to mashed potatoes. Add a sprinkle of cheese for a little zing.
Spaghetti Squash
This is very simple…replace your spaghetti noodles with spaghetti squash. Then just top with your favorite pasta sauce.
Kale Chips
A great replacement for those late-evening chip binges at the office. Just like carrot fries, kale chips are baked and not fried.
